Naught Gin Fizz

Sep 17, 2025

The Gin Fizz is a bright, bubbly, creamy classic. Gin, lemon, sugar, egg white, topped with cold soda. Shaken hard until silky, then served long in a highball with a lemon wedge. It's been on bar menus for more than a century for a reason.

Our version uses Naught Overproof Gin at 57.4% ABV (navy strength), which keeps the gin tasting like gin even after the dilution from shake and soda.

INGREDIENTS:

  • 60ml Naught Overproof Gin
  • 25ml Fresh Lemon Juice
  • 20ml Semi-Rich Sugar Syrup
  • 15ml Egg White
  • Top with chilled soda water

GARNISH:

  • Lemon Wedge

INSTRUCTIONS:

Add the gin, lemon juice, sugar syrup and egg white to a shaker without ice. Dry shake hard for 15 seconds to build the foam.

Add ice and shake again for 15 seconds to chill and dilute. Fine-strain into a chilled highball glass with no ice.

Slowly top with cold soda water, pouring down the inside of the glass to lift the foam. Garnish with a lemon wedge on the rim.

Why navy strength gin works here

The Gin Fizz dilutes faster than almost any other cocktail. Between the shake, the egg white, and the soda water on top, a standard 40% gin can disappear into the background. Naught Overproof Gin at 57.4% ABV (navy strength) gives the drink the structure to taste like a gin cocktail all the way through, not just a creamy lemon drink.

Frequently asked questions

What is a Gin Fizz?

The Gin Fizz is a classic cocktail made with gin, lemon juice, sugar syrup, egg white, and topped with cold soda water. It's served long in a chilled highball with no ice in the glass at service. The egg white gives it a creamy texture and signature head of foam.

What's the difference between a Gin Fizz and a Tom Collins?

Same base of gin, lemon, sugar, but the Gin Fizz adds egg white (and skips ice in the serving glass), while a Tom Collins has no egg white and is served over ice. The Fizz is creamier and shorter; the Collins is brighter and longer.

What gin works best in a Gin Fizz?

A navy-strength gin gives the cocktail the structure it needs. Naught Overproof Gin at 57.4% ABV is built for cocktails like this, where shaking, egg white and soda dilution all reduce the spirit's presence. A standard London Dry works but produces a softer, less defined Fizz.

Can I make a Gin Fizz without egg white?

Yes. Substitute 15ml aquafaba (chickpea brine) for a near-identical vegan-friendly foam. Skipping the egg white entirely gives you a simpler sparkling lemonade cocktail, but you lose the signature texture.

What's a Ramos Gin Fizz?

The Ramos Gin Fizz is a New Orleans variation that adds cream and orange flower water to the base recipe, and famously requires a long shake (some bars shake it for 12 minutes). The result is silky, floral, and significantly richer than a standard Gin Fizz.

What's a Silver Fizz?

A Silver Fizz is essentially the standard Gin Fizz, named to distinguish it from a Golden Fizz (which uses a whole egg yolk instead of just the white) and a Royal Fizz (which uses a whole egg). The naming convention dates from late-1800s American bar culture.
