The Gin Fizz is a bright, bubbly, creamy classic. Gin, lemon, sugar, egg white, topped with cold soda. Shaken hard until silky, then served long in a highball with a lemon wedge. It's been on bar menus for more than a century for a reason.
Our version uses Naught Overproof Gin at 57.4% ABV (navy strength), which keeps the gin tasting like gin even after the dilution from shake and soda.
INGREDIENTS:
- 60ml Naught Overproof Gin
- 25ml Fresh Lemon Juice
- 20ml Semi-Rich Sugar Syrup
- 15ml Egg White
- Top with chilled soda water
GARNISH:
- Lemon Wedge
INSTRUCTIONS:
Add the gin, lemon juice, sugar syrup and egg white to a shaker without ice. Dry shake hard for 15 seconds to build the foam.
Add ice and shake again for 15 seconds to chill and dilute. Fine-strain into a chilled highball glass with no ice.
Slowly top with cold soda water, pouring down the inside of the glass to lift the foam. Garnish with a lemon wedge on the rim.

The Gin Fizz dilutes faster than almost any other cocktail. Between the shake, the egg white, and the soda water on top, a standard 40% gin can disappear into the background.
