Basil Collins
Basil & Rhubarb make a beautiful combination. This is a refreshingly aromatic take on the traditional gin cocktail, the Tom Collins.
Sourcing the ingredients for this cocktail will be worth the effort. You will need to make a few things in advance like a semi rich sugar syrup (please see below), and purchase a bottle of Fee Brother Rhubarb Bitters for your home bar.

Ingredients
- 60ml of Naught Australian Dry Gin
- 25ml Lemon Juice
- 20ml Semi Rich Sugar Syrup
- 3 Basil Leaves
- 2 Dashes Fee Brothers Rhubarb Bitters
- Soda Water
- Basil & Lemon Wedge Garnish
Semi Rich Sugar Syrup
- 1 Cups of granulated sugar
- 1.5 Cups of water
Combine both ingredients and bring to the boil until all of the sugar has been dissolved, set aside to cool down before bottling it in your favourite spare bottle.
Create Your Cocktail
Combine all your ingredients into a shaker. Add ice and shake well.
Strain this out into a highball glass, add cubed ice, and top with soda water. Stir the ingredients to mix and then top again with soda water. Garnish with a wedge of lemon and fresh basil leaf.
