Rosella & Grapefruit Collins
This gin cocktail is a modern interpretation of the traditional sour gin cocktail, Tom Collins.
Rosella and grapefruit make a beautiful combination however, to create this very pretty and refreshing cocktail, you will need to invest a little more time to mix the colour and flavour before you serve.
Hopefully, you’ll enjoy the mixology and the process of making this Rosella and Grapefruit Collins; from sourcing the ingredients to taste testing the flavours, presenting your cocktail in the glass, and sitting back to enjoy the first sip.

- 50ml of Naught Gin
- 65ml of Rosella & Grapefruit Cordial (see below)
- Soda Water
- Grapefruit Twist
MAKE IT LIKE THIS
The first thing you will need to do is source some dried Rosella. It is not the easiest ingredient to locate but you can source it online or try your local health food or natural food stores.
Once you have some Rosella, make the Rosella and Grapefruit Cordial first and store it until you are ready to mix your Rosella and Grapefruit Collins.
Rosella & Grapefruit Cordial
- 12g dried rosella
- 100g grapefruit zest (approximately from 2 grapefruits)
- 200ml grapefruit juice
- 400g sugar
- 1 tsp citric acid
- 1L boiling water
Place the dried rosella in a large bowl with grapefruit zest and hot water. Cover the bowl and leave for 5 minutes.
Strain into a saucepan with a fine strainer or muslin cloth. Let it cool down to room temperature before you add the sugar, citric acid and grapefruit juice. Gently simmer on a low heat for 3 to 4 minutes to dissolve the sugar. Once you are happy with the flavour, colour and it has a thickened consistency, bottle in a sterilised bottle, seal and store in the fridge until you are ready to use it.
Create Your Cocktail
In a highball glass, add cubed ice, the gin and cordial and fill the glass halfway with soda water. Stir the ingredients to mix the colour and flavour through the glass, top again with soda water and give the glass a final stir, before adding the grapefruit twist to serve.
